01شو هي؟

علامة بتنحط على صنف واحد من مطبخ واحد، لموسم واحد، والموسم ثلاث شهور. بيمنحها فريق SteadyForce بعد زيارة للمطبخ وفحص للأوراق، وبيرجع يفحص كل موسم.

العلامة معيار خاص بمهراس، وما بتحلّ محل أي رخصة رسمية.

01What it is

A mark for one item from one kitchen, for one season of three months. SteadyForce awards it after a kitchen visit and a document check, and checks again every season.

It is a private Mihras standard and replaces no official licence.

02الأركان الخمسة

1. ١

   مطبخ مرخّص

   المعيار

   رخصة سارية بتشمل هالصنف بالذات. المطبخ البيتي: رخصة البلدية حسب تعليمات المؤسسة العامة للغذاء والدواء لسنة 2024، وموافقة المؤسسة على التوزيع. والصنف اللي برّا قائمة المطبخ البيتي بدّه رخصة منشأة غذائية. وشهادة صحية لمين بيحضّر الأكل، إذا القانون بيطلبها.

   الدليل المطلوب

   صورة الرخصة وقائمة الأصناف المرخّصة.

   كيف بنفحص

   زيارة: بنطابق المطبخ والأصناف مع الرخصة، وبنراجع النظافة الأساسية.

2. ٢

   صور حقيقية

   المعيار

   كل صورة وفيديو للصنف متصوّر بكاميرا، بهالمطبخ، لهالصنف. لا صور مولّدة ولا مركّبة بالبرامج، ولا صور جاهزة، ولا صور مطبخ تاني. التعديل المسموح: القص والإضاءة واللون بس.

   الدليل المطلوب

   الملفات الأصلية بتواريخها، وصورة مرجعية بياخدها الفريق بالزيارة.

   كيف بنفحص

   بنقارن صور العرض بصور الزيارة، ومع فحص عشوائي بين المواسم.

3. ٣

   طبّاخ باسمه

   المعيار

   اللي بيطبخ الصنف هو صاحب الاسم المكتوب عليه. الاسم أو الكنية بموافقة موقّعة منه. لا مطابخ مخفية ولا إعادة بيع.

   الدليل المطلوب

   نموذج الموافقة على الاسم. الهوية بتنعرض بالزيارة وما بتنتسخ.

   كيف بنفحص

   الزيارة، ومكالمة عشوائية وقت التحضير.

4. ٤

   زيت ومكوّنات معروف مصدرها

   المعيار

   زيت الزيتون من بستان مسمّى ومعصرة مرخّصة، بتاريخ عصر معروف. المكوّنات الأساسية، زي الجميد والفريكة والقمح والسمن، من مصادر مسمّاة. ولا خلط مع زيت مش معروف مصدره.

   الدليل المطلوب

   وصل المعصرة بالتاريخ والكمية، وفواتير الموردين، وفحص الحموضة إذا موجود.

   كيف بنفحص

   بالزيارة بنطابق الوصولات مع الكميات اللي انباعت.

5. ٥

   أجر عادل

   المعيار

   الطبّاخ بيحدّد سعره. عمولة مهراس إلها سقف مكتوب بالاتفاقية من الأول، والدفع خلال مدة مكتوبة بالاتفاقية من يوم التسليم. وكل حدا بيساعد بالمطبخ بياخد الحد الأدنى للأجور على الأقل (290 دينار بالشهر من 1/1/2025)، أو اللي بيعادله حسب الوقت.

   الاتفاقية الموقّعة، وكشوف الدفعات، وسجل أجور المساعدين إذا في.

   كيف بنفحص

   بنراجع الكشوف كل موسم، وبنسأل الطبّاخ بمكالمة خاصة.

02The five pillars

1. 1

   Licensed kitchen

   Criteria

   A valid licence covering this exact item: the municipal licence under the JFDA's 2024 home-food instructions plus JFDA approval to distribute, or a food-establishment licence for items outside the home-kitchen list. A health certificate for whoever prepares the food, where the law requires one.

   Evidence

   A copy of the licence and its list of items.

   How we check

   A visit: the kitchen and items match the licence, and basic hygiene is reviewed.

2. 2

   Real photos

   Criteria

   Every photo and video is shot with a camera, in this kitchen, of this item. No generated or composited images, no stock, no other kitchen's photos. Edits: crop, light and colour only.

   Evidence

   Dated original files, and a reference photo taken at the visit.

   How we check

   Listing photos are compared with visit photos, with random checks between seasons.

3. 3

   Named cook

   Criteria

   The person named on the item cooks it. The name or kunya is shown with their signed consent. No hidden kitchens, no reselling.

   Evidence

   A signed name consent. ID is shown at the visit and never copied.

   How we check

   The visit, plus a random call while the item is being made.

4. 4

   Traceable oil and ingredients

   Criteria

   Olive oil from a named grove and a licensed press, with its pressing date. Key ingredients such as jameed, freekeh, wheat and samneh come from named sources. No blending with oil of unknown origin.

   Evidence

   The press receipt with date and quantity, supplier receipts, and an acidity test if there is one.

   How we check

   At the visit, receipts are matched to the quantities sold.

5. 5

   Fair pay

   Criteria

   The cook sets the price. The Mihras commission has a cap written into the agreement from the start, and payment is due within a period the agreement sets from delivery. Anyone who helps in the kitchen earns at least the minimum wage (JD 290 a month since 1 January 2025) or its hourly equivalent.

   Evidence

   The signed agreement, payout statements, and helpers' pay records if there are helpers.

   How we check

   Statements are reviewed every season, and we ask the cook in a private call.

03وين بتظهر العلامة

• على صنف اجتاز الأركان الخمسة بالموسم الحالي بس.
• بصفحة الصنف على مهراس، وعلى ملصق العبوة، وعلى كرت بكيس التوصيل، وبالمنشور اللي بيعرض الصنف نفسه وبيوصّل لصفحة فحصه.
• مع رمز قصير لكل علامة، زي MH-‹المطبخ›-‹الصنف›-‹الموسم›، بيفتح صفحة عامة فيها حالة العلامة وتاريخ آخر زيارة.
• وما بتظهر أبداً على صنف ما انفحص، ولا على منيو مطبخ كامل، ولا على منتج حدا تاني، ولا جنب أي شعار رسمي أو ملكي، ولا بشكل بيوحي إنها رخصة حكومية.

03Where the mark may appear

• Only on an item that passed all five pillars this season.
• On its Mihras page, its pack label, a card in the delivery bag, and posts that show that item and link to its check page.
• Each mark has a short code, such as MH-‹kitchen›-‹item›-‹season›, that opens a public page with its status and the date of the last visit.
• Never on an unchecked item, a whole menu or another seller's product, never next to any official or royal emblem, and never presented as a government licence.

04الإيقاف والسحب

• إيقاف فوري للصنف إذا انتهت الرخصة أو انعلّقت، أو طلعت صورة مش حقيقية، أو طبخ الصنف حدا غير المسمّى، أو ما ثبت مصدر الزيت، أو مساعد بالمطبخ ما أخد أجره، أو إجت شكوى سلامة غذاء لسّا قيد التحقق.
• وقت الإيقاف، صفحة الصنف بتبيّن «قيد المراجعة»، وإلها مهلة مكتوبة للتصحيح، وبعدها زيارة جديدة.
• سحب العلامة إذا ثبت غش مقصود، أو حادثة سلامة غذاء مؤكّدة، أو تكرّر الإيقاف مرتين خلال 12 شهر. وبيقدر المطبخ يقدّم من جديد بعد فترة انتظار.
• وإذا مهراس أخلّت بالتزامها، زي تأخير الدفع أو رسوم مش مكتوبة، العلامة بتضل للمطبخ، ومهراس بتدفع للطبّاخ تعويض عن كل يوم تأخير.

04Suspension and revocation

• Immediate suspension of the item if the licence lapses or is suspended, a photo is not real, someone other than the named cook makes it, the oil's source can't be shown, a helper goes unpaid, or a food-safety complaint is under investigation.
• The item page then shows “Under review”, with a written deadline to fix it before a new visit.
• Revocation for proven deliberate deception, a confirmed food-safety incident, or two suspensions in 12 months. The kitchen may reapply after a waiting period.
• If Mihras breaks its side, such as late payment or fees not agreed in writing, the kitchen keeps the mark and Mihras pays the cook compensation for each day of delay.

05الاستئناف

• خلال 14 يوم من القرار، برسالة واتساب أو إيميل على hello@steadywrk.app.
• بيرد عليه حدا من STEADYWRK ما شارك بالفحص، كتابةً وبالعربي، ومع السبب.
• بيحق للطبّاخ يقدّم أوراق جديدة، ويجيب معه حدا بيثق فيه.
• وقت الاستئناف بيضل الصنف بلا علامة.

05Appeals

• Within 14 days of the decision, by WhatsApp or by email to hello@steadywrk.app.
• Someone at STEADYWRK who took no part in the check answers in writing, in Arabic, with reasons.
• The cook may bring new documents, and a person they trust.
• The item stays without the mark during the appeal.
